Big Winter Soups/Stews?
Anyone here keen on making a huge pot of soup or stew for the winter?

We here currently have a big pot of vegetable soup on the boil in the kitchen here.
Anyone keen to compare recipes?

At this end:
Potatoes
Carrots
Swede
Barley (It isn't winter soup without barley)
Silver-beet
Last nights leg of lamb on the bone, stripped of all meat and added to the pot, meat added also, in chunks.

Some people also add stocks as well, but I disagree with that.
But if you make your own, sure by all means add it, I find all the pre-made stocks far too salty and can ruin an otherwise good soup.

BTW, we grew all of the veges in our garden that went into this soup.

So, how is your soup done?

I love my wifes recipe for stew

olive oil
• a knob of butter
• 1 onion, peeled and chopped
• a handful of fresh sage leaves
• 800g/1¾lb stewing steak or beef skirt, cut into 5cm/2 inch pieces
• sea salt and freshly ground black pepper
• flour, to dust
• 2 parsnips, peeled and quartered
• 4 carrots, peeled and halved
• ½ a butternut squash, halved, deseeded and roughly diced
• optional: a handful of Jerusalem artichokes, peeled and halved
• 500g/1lb 2oz small potatoes
• 2 tablespoons tomato purée
• ½ a bottle of red wine
• 285ml/½ pint beef or vegetable stock
• zest of 1 lemon, finely grated
• a handful of rosemary, leaves picked
• 1 clove of garlic, peeled and finely chopped

Kerry here;this is a winter soup of mine.be aware though you may just need the concrete mixer in latter stages as she becomes a fairly stiff breww.here goes;
get yourself some big heaps of veg(pumpkin,spuds,carrots s/beet,onions and anything else deceased in the vege bin or fridge.put the lot in a big container and microwave/cook it throughly.(hmmmmm slowcooker @8hrs is viable too).
right now put the lot through the food processor-yeah it does look kike psychedelic concrete.
put that to one side and get yourself a big dollop of butter (or marg) and a hefty slug of whipped cream(yoghurt works too) add this to the mix and blend in.salt +pepper to taste.
Ive sometimes even added a touch of Homebrew ale if i feel so inclined.
obviously its a big un ,and thick- cool it down ,into icecream containers and into the freezer.normally 1/2 a container of this thinned down will make a big pot of soup for our mob of five.
